Taboulleh

INGREDIENTS

1 cup Anthos Pourgouri                                                                         4 large tomatoes                                                                                  2-3 Medium sized cucumbers                                                                  3 Handfuls of chopped parsley                                                                 4 Chopped spring onions / 1 large finely chopped onion                               3 tbs Dry mint / handful of fresh chopped mint                                         6 tbs Minos E.V Olive oil                                                                    Juice of 1 lemon                                                                                  Salt to season

                                                                                     

 

Pour the cup of pourgouri in a bowl and pour over 2 cups of hot water and ;eave for an hour.

In the meantime, chop the tomatoes and the cucumber and remove the pulp and seeds, chop finely.

In a bowl add the onions tomatoes and cucumber, when the pourgouri is ready mix well with all ingredients and chill for about 1 hour.

Then serve as a main meal or a side salad.
