Alubia Beans BoiIed / Fasolia Vrasta

INGREDIENTS

500grm ANTHOS Alubia Beans / Fasolia soaked                                       Twig of Rosemary                                                                                   1 Bay leaf                                                                                            1.5 lit water

DRESSING

10 tbs of MINOS E.V. Olive Oil                                                               Juice of 2 lemons                                                                                    2 Handfuls of chopped flat-leaf parsley

 

 

All beans should be soaked over night , then boiled fiercely in plenty of water for 10 mins, then drain.

Place the beans and herbs with the 1.5 lit of water into a large saucepan and simmer for an hour or until tender. Remove the herbs and drain the water.

Serve the beans and drizzle over with the dressing.
